We’re leaving the hectic center of Rome behind to visit an old 17th century farmhouse near the Campagna, the Roman countryside. It’s a restaurant located in the Valle dei Casali Nature Reserve a few kilometers from the city. A clear statement of intent on the part of chef Marco Moroni, whose innovative and creative gastronomic proposal skillfully combines modernity and tradition.
