We’re leaving the hectic center of Rome behind to visit an old 17th century farmhouse near the Campagna, the Roman countryside. It’s a restaurant located in the Valle dei Casali Nature Reserve a few kilometers from the city. A clear statement of intent on the part of chef Marco Moroni, whose innovative and creative gastronomic proposal skillfully combines modernity and tradition. Dishes are created with certified organic produce, and deep local roots. The chef’s passion and dedication shine through in all his dishes.
Immerse yourself in this culinary experience by savoring salmon marinated in beetroot juice with sweet paprika, smoked buffalo milk ice-cream, and salted popcorn. Absolutely delicious!

We’re now changing continents, but without leaving Rome. Because Rome is about much more than just pasta and pizza.
